Pamela Erskine-Layton, owner of Simply Wonderful Catering

A former investment banker in New York and vice-president with Citibank in Montreal, Pam decided a career change was in order when she married in 1998. She went for passion and found it in cooking, a Simply Wonderful expression of her love of serving up great food experiences for her family and friends.

In 1998, without any formal food training, Pam rolled up her sleeves and started catering events for friends in cottage country. She cooked out of her home kitchen until 2004, when the growing business necessitated both more space and personnel. Pam and her husband purchased the Westmount building which houses both Simply Wonderful’s commercial kitchen and their personal residence. Now just moments away from the customers who pop in to the kitchen to plan events and pick up food, Pam oversees the catering operation while testing new recipes in her own kitchen upstairs.

Her natural organizational abilities and management skills learned in corporate life minimize the stress clients can feel in planning an event; Pam’s attention to detail and demanding standards ensures consistently high quality output from her kitchen and serving staff.

Having discovered how wonderful it is to have her staff prepare and serve dinner parties in her home, Pam wants you to enjoy the same feeling of being a pampered guest in your home. She also insists that our food is remembered for being delicious, not fancy. We always strive to be simply wonderful.

If you soak moderately wilted greens in warm water (from the tap) for 5 - 10 minutes before you soak them in cold, they will actually crisp up better than if you used cold water alone.
